LOCALITY: East Coast to Northern NSW, and the West Coast to Shark Bay.

SIZE: Some fish grow up to 1.2mtrs, most around 60cm. They live in coastal waters feeding on smaller fish and crustaceans.

TEXTURE & TASTE: Considered by most anglers to be one of the best eating fish. The flesh is very white with a large flake with a sweet mild flavour.

COOKING: Very important to undercook, as if left to stand, the fillets retain a lot of heat and will continue cooking. Fry, grill or bake. If cooked properly the fillets will be moist and flaky.

GENERAL: There is definite controversy over which fish is a Dhufish, one thing is definite, it is one of the best presented and tasting fish we sell.
