LOCALITY: In the Southern waters of Australia and surrounding New Zealand. Commonly found in offshore reefs, feeding on smaller fish.

SIZE: Generally a smaller fish, though has been known to grow up to 60cm in length. On a commercial basis generally caught when smaller than 30cm, giving small plate size fillets.

TEXTURE & TASTE: One of the finest table fish, with moist white flesh that is finely textured with a delicate sweet flavour.

COOKING: Well suited to most types of cooking. Best to coat in flour or crumbs, or wrap in foil.

GENERAL: One of the most popular fish we have ever sold, mainly due to the perfect white and small plate size fillets. (Note: the odd bone has been found in the occasional fillet.
