LOCALITY: Generally found in the Colder Southern Waters. They are usually found close to the bottom in deep water.
SIZE: Can grow up to 4 kg but mostly caught when under 1 kg, giving small plate size fillets.
TEXTURE & TASTE: A small fillet with a soft white flesh, mild flavour and fine texture.
COOKING: Being a smaller flaky fillet you should fry or bake. A light coating of flour or crumb will hold fillet together whilst cooking.
GENERAL: A very popular fish that is quick to defrost and quick to cook. The smaller size fillets are well suited to small families.
NOTE: Ocean processed hake is very different from land processed. Many supermarkets sell the cheaper land processed Hake that has been frozen on board whole and then defrosted and filletted on land. Ocean processed hake (Silver Snapper) is far nicer tasting and a better quality fillet.
