LOCALITY: Generally found in the deeper waters from Albany right across the bight to New Zealand, mainly near sandy beaches, bays and estuaries.

SIZE: Generally known as being a smaller fish though Deep Sea Whiting would be known as one of the larger species available. Most fillets being 15-30cms long.

TEXTURE & TASTE: A slightly sweet tasting flesh with a fine texture, usually with skin left on Low in oil and moist Flesh.

COOKING: Best to cook with skin on to help retain moisture. Pan fry and best with a coating of flour or crumb.

GENERAL: A cheaper variety of fish suited for the budget minded customer and someone that likes a slightly stronger flavour.
