LOCALITY: In Southern waters, especially surrounding New Zealand.

SIZE: Can grow up to 1.5 kg in size, giving a nice plate sized fillet.

TEXTURE & TASTE: A small to medium sized fillet with a firm white flesh. A small bloodline that is not strong in flavour.

COOKING: Quite suitable for most types of cooking, especially baking or shallow frying.

GENERAL: There are a number of different qualities of Hoki marketed, from skin-on, which has a quite darker flesh and stronger flavour to the premium export grade which is deeply skinned and deboned, being the grade we select.
