1kg Mussels
1 cup fresh breadcrumbs
2 tblspn olive oil
2 tblspn pesto
Salt and freshly ground pepper
To Cook:
Steam open the mussels. Drain.
Arrange two mussels on one shell and discard surplus shells.
Combine the breadcrumbs and pesto.
Pile this mixture over the mussels and drizzle over the olive oil. Season.
Place on a baking tray and bake in a very hot oven until golden.
Serve warm.
