3 tbsp Margarine or Butter
1 cup sliced Celery
1 cup chopped Onion
2 cloves minced Garlic
1/4 cup dry White Wine
2 cans Cream of Corn or Broccoli Soup
1 cup Milk
500g Sweetlip fillets, cut into 2.5cm pieces
2 tbsp green or red Capsicum
generous dash of Cayenne Pepper
To Cook:
In a large saucepan over medium heat, put in margarine and cook celery, onion and garlic until tender, stirring often.
Add wine, cook for 2 mins.
Add soup, stir until smooth.
Gradually stir in milk.
Add fish, capsicum and cayenne pepper.
Heat to boiling.
Reduce heat to low.
Cover and cook 5 mins or until fish flakes easily when tested with fork.
