Calabrese Fish Parcels

Ingredients:

6 Fillets of Fish
1/3 cup Olive Oil
1/2 Red Capsicum
1 Stick Celery
Lemon Slices
2 Stems Spring Onion
1/2 Leek
1/2 Carrot
White Wine
Salt & Pepper

To Cook:

Rinse fish under fresh water.
Take 6 sheets of foil and place a fish on each piece.
Divide even amounts of vegetables (julienne) onto each fish.
Pour over a little oil and white wine and add salt & pepper.
Place a slice of lemon on top of each. Fold and seal the parcels tightly.
Place them on a baking sheet on a tray and bake in pre-heated oven 220C for about 20 mins.
