500g Scallops
60g Butter 125g Mushrooms
1 cup Dry white wine
2 cups Cream
Cayenne Pepper
S&P
1/2 cup Tasty Cheese grated
To Cook:
Melt butter, add mushrooms and cook 1 minute.
Add wine and simmer gently until reduced by half, add scallops and simmer 2 minutes.
Add the cream, a dash of cayenne pepper and seasonings to taste.
Mix well and reheat, but do not boil.
Pour mixture into scallop shells or an ovenproof dish.
Top with grated cheese and brown under the grill.
Serve immediately garnished with lemon wedges and parsley.
