750g Coral Trout fillets
4 Shallots finely chopped
2 tbsp finely chopped Parsley
125g Mushrooms, finely chopped
250g Cooked Cocktail Prawns, cut into very small pieces
S&P
1/2 cup White Wine
To Cook:
Rinse fillets under fresh water.
In a bowl combine shallots, parsley, mushrooms and prawns.
Mix well.
Place spoonfuls of mixture onto each fillet and roll up.
Secure with toothpicks. Lay rolled fillets in a greased baking dish and pour over wine.
Cover and bake at 180C for 20-25 mins until flesh flakes.
Serves six.
