Crayfish & Noodle Salad

Ingredients:

2 cooked crayfish, cut into bite size pieces
1 mango peeled and sliced
honey dew melon cut into bite size pieces
2 tomatoes peeled, deseeded and sliced
100gm snow peas trimmed and blanched
1packet of rice noodles soaked in warm water until soft, drained and rinsed
Sesame oil dressing:Saute until soft but not brown
3 tablespn sesame oil
3 spring onions sliced
2 tablespn ginger chopped
4 cloves garlic crushed
1 stick lemongrass sliced
1 tablespn honey
1 tablespn soy sauce
1 teaspn five spice
200ml chicken or vegetable stock
Simmer for 15 minutes, cool and drain

To Cook:

Mix all prepared ingredients with sesame oil dressing.
Serves 2 as main course or 4 entrees.
Garnish with red chilli, coriander and lime zest (optional)
