Fish in Spicy Coconut Milk Recipe supplied by Rosie from Rosebees
Ingredients:
Large Snapper Fillets or similar (dry fish)
Golden Dipt Lemon Herb Seafood Marinade
1 finely chopped Onion
2 cloves Garlic
1/2 tsp freshly grated Ginger
1 tsp Turmeric
1/2 - 1 tsp Chilli Powder or fresh if you have it
2 strips Lemon Rind
1 tsp Salt
1 cup thin Coconut Milk
2 tbsp chopped Basil Leaves
1 cup thick Coconut Milk
To Cook:
Rinse fish under fresh water.
Place fish in dish and pour half a cup of lemon herb marinade over fish, allow to stand while you combine the sauce.
Combine onion, garlic, ginger, turmeric, chilli, lemon rind, salt, thick coconut milk.
Bring sauce to simmering point and cook until onion is soft.
Take fish from marinade and place in simmering sauce.
Add basil and simmer until fish is 1/2 cooked.
Add thick coconut milk and remainder of fish marinade.
DO NOT ALLOW TO BOIL, stir gently.
Serve with boiled rice.
