Fish Surprise

Ingredients:

1kg small whole fish
3/4 cup breadcrumbs
1/4 tsp thyme
1/4 tsp sage
1 small finely chopped onion
1 dsp chopped parsley
S&P
1 dsp margarine
4 tsps lemon juice
2 chopped tomatoes
2 cups chopped mushrooms
1 cup chopped spring onions

To Cook:

Scale, gill and gut fish and leave the head on.
Wash, then pat dry inside and out with paper towel.
Make a seasoning by mixing the breadcrumbs, thyme, sage, chopped onion, parsley, S&P in a bowl.
Add margarine then moisten with lemon juice.
Place each fish in foil with a small amount of margarine to stop fish sticking to foil when cooked.
Mix tomatoes, mushrooms, spring onions, S&P.
Spread over each fish evenly.
Fold foil over and secure. Bake in pre-heated oven at 180C for 20-25 mins.
