Italian Stuffed Squid

Ingredients:

kg Squid Tubes
1tsp chopped Parsley

Stuffing:
450g Pork Sausage Meat
2 beaten Eggs
1 crushed Garlic Clove
1 tbsp chopped Parsley
S&P

Sauce:
2 tbsp Oil
1 chopped Onion
1 crushed Garlic Clove
450g tinned tomatoes,
1 tbsp Tomato Paste
150ml Water
1/2 Chicken Stock Cube

To Cook:

Rinse Squid Tubes in cold water.
Make the stuffing by mixing together all ingredients.
Place the stuffing inside the squid tubes and arrange them in a shallow ovenproof dish.
Preheat oven to 180C.
Heat the oil for the sauce in a pan and saute the onion and garlic until soft.
Add the tomatoes, tomato paste, water and stock cube.
Boil for 2-3 mins, then season.
Pour the sauce over the stuffed squid and braise in the oven, covered with a lid for 75-90 mins.
Cut into slices, sprinkle with chopped parsley and serve.
