Moreton Bay Bug Tails
Oil and your choice of Marinade.
To Cook:
Firstly rinse under fresh water.
Holding the tail on either side, cut carefully down either side of the belly (may take some sawing on the joins).
Peel belly off exposing the meat in the shell.
Rinse again under fresh water and dry off with a paper towel.
Preheat BBQ plate and place shell down direct onto plate.
If you're after a marinade taste, try cutting a couple of grooves into the exposed meat and sprinkle with garlic and butter or sweet chilli etc.
You will find the meat simmers in the shell with all the flavour and marinade soaking into the meat.
You will be able to gauge the cooking time by watching the exposed end of the tail turning white all the way through.
To finish off the cooking turn over to brown the belly side for a few seconds.
When cooked the meat should easily prise out of the shell.
They not only look great when cooking they will taste great too!
