1kg Moreton Bay Bug Tails
30g Butter
3 Garlic Cloves
1 cup finely chopped Parsley
S&P
2 tbsp Lemon Juice
2 tbsp Tomato Paste
1 cup Cream
To Cook:
Rinse bugs and remove meat.
Melt butter in a large shallow pan, add bug tails, garlic and parsley and gently fry for 2-3 mins.
Season with salt and pepper.
Stir in lemon juice, tomato paste and cream.
Heat gently and serve on a bed of boiled rice.
