Mussels Steamed in White Wine

Ingredients:

600gm mussels
1 diced onion
2 cloves chopped garlic
3 tablespn chopped fresh parsley and basil
1 cup good white wine

To Cook:

Saute the onion in spring water.
Add garlic, wine and bring to the boil.
Add the mussels, cover and simmer for 5 minutes until opened.
Mix through herbs and spoon into bowls.
Serves Two.
