Old English Fish Pie

Ingredients:

1kg Spinach (or 450g frozen spinach)
4 Tomatoes, skinned and sliced (or tin tomatoes, drained)
500g White Fish (rinsed)
125g Broccoli, cut into small florets
125g Carrots, cut into small pieces
1 1/2 cups low fat Milk
1 tbs Cornflour
1/2 cup Mature Cheese
S&P

To Cook:

Cook potatoes and mash with margarine and 3 tbs Milk.
Put fish into a pan with remaining milk, bay leaf, mace and peppercorns.
Bring to boil and simmer for 2-3 mins.
Remove from heat, cover pan and let stand until fish is cook enough to handle.
Stain the milk into another pan discarding herbs.
Mix the cornflour with a little cold water, add to milk, bring to the boil stirring constantly.
Simmer for 2-3 mins.
Flake the fish, add to the sauce with parsley and eggs.
Taste and adjust seasoning.
Transfer mixture to an ovenproof dish, top with mashed potatoes, and sprinkle with grated cheese.
Cook in a preheated oven 200C for about 25 mins until topping is brown or microwave on medium for 12-15 mins, finishing off under the grill.
