1/2 cup Plain Flour
1/2 cup Cornflour
1 1/2 tsp Baking Powder
Salt
1 Egg
3/4 cup Iced Water
To Cook:
Sift flours, baking power and salt into a chilled bowl.
Beat the egg and water together.
Pour into flour mixture and stir gently to combine.
Do not overmix.
Add one ice cube to mixture to help keep cold.
Dip seafood in batter and cook as usual.
