Scallops En Brochette

Ingredients:

750g Scallops
6 rashers Bacon
1 tbsp Honey
1 tbsp Soy sauce
2 tbsp Pineapple juice
1 tbsp Lemon juice

To Cook:

Soak bamboo skewers in water for 1 hour before using to stop them from burning during cooking.
Place honey, soy sauce, pineapple and lemon juice in a bowl.
Mix well.
Cut each rasher of bacon into three and roll up each section.
Thread scallops and bacon rolls onto skewers.
Marinate in money mixture for at least 1 hour.
Cook skewers under grill or barbecue about 1-2 mins each side.
Brush with the marinade while cooking.
