Seafood Cocktail

Ingredients:

1 kg Seafood Extender Mix
2 celery stalks, diagonally sliced
4 oranges
peeled and cut into segments
2 tablespoons poppy seeds

Dressing:
4 tablespoons vegetable oil
2 tablespoons white vinegar
1 teaspoon grated
Orange rind

To Cook:

Thaw Seafood Extender Mix according to directions.
In a bowl combine all salad ingredients.
Whisk together dressing ingredients and pour onto salad, tossing gently.
Toss thawed Seafood Extender Mix with rocket leaves.
Make a dressing from combined oil, vinegar, and capers and pour over salad.
