1 chopped Onion
1 tsp Garlic
1 tsp Ginger
1 tbsp Clive of India Curry Powder
2 tbsp Water, 1 tbsp Oil
1 1/2 cups Coconut Milk
2 tsp Golden Syrup
4 small sliced Zucchinis
1/2 Red Capsicum
500g Raw Prawn Meat
To Cook:
Place onion, garlic, ginger, curry power and water into a blender and mix to a puree.
Heat oil and fry puree gently for 2-3 mins.
Add coconut milk and golden syrup, simmer for 20 mins.
Add zucchini, capsicum and prawns and simmer a further 5-10 mins, until prawns are just cooked.
Serve with rice and mango chutney.
