500gm good quality spaghetti
Sea salt & black pepper
2kg peeled and chopped roma tomatoes
1 teaspn cold pressed olive oil
1 diced onion
2 cloves chopped garlic
1cup red wine, cup chopped fresh herbs (parsley, basil, chives, thyme)
500gm whole shelled prawns
2 tablespn freshly grated parmesan cheese to serve
To Cook:
Saute onion and garlic until soft and translucent.
Add the tomatoes, sugar and wine, cover and simmer for 25-30 minutes.
Meanwhile cook the pasta in plenty of salted boiling water until al dente and drain.
Add the prawns to the simmering tomatoes and cook for a further 5 minutes until cooked through.
Season to taste; fold in the fresh herbs and toss together with the spaghetti.
Divide between serving plates and serve immediately.
