Sweet Fish Curry with Toasted Almonds

Ingredients:

1 Onion, finely chopped
1 clove crushed Garlic
1 tbs Oil
1 tsp Turmeric
1 tsp Garam Masala
1 tsp ground Coriander
1 tbsp Milk Curry Paste
3/4 cup Fish Stock
4 tbs Mango Chutney
1 tbs Lemon Juice
S&P
750g White Fish Fillets, rinsed and cut into cubes
1/4 cup flaked toasted Almonds

To Cook:

Cook onion and garlic in oil until soft.
Add spices and curry paste, stir well and cook for 1 min.
Add stock, chutney, lemon juice, S&P.
Bring to the boil, simmer gently uncovered for 5 mins, then add fish.
Stir gently, cover pan and cook for 10 mins.
Transfer to a warm serving dish, sprinkle with the almonds.
