Whole Stuffed Fish (Mircowave)

Ingredients:

4 whole fish
50g butter or margarine
1 stalk celery
2 chopped spring onions
50g sliced mushrooms
2 tbsp finely chopped parsley
1 tsp grated lemon zest
1/4 tsp salt, large pinch dried basil
Pepper
2 slices white bread
8 oz cocktail prawns

To Cook:

In a medium bowl combine butter, celery and spring onions.
Cover and microwave at 100% high for 4-6 mins or until the celery is tender.
Stir in the mushrooms, parsley, lemon zest, salt, basil and pepper.
Cut bread into 1/4 in cubes and add to mixture.
Toss until thoroughly coated with the vegetable mixture.
Chop the prawns into small pieces and mix into the stuffing.
Spoon 1/4 of the stuffing into each fish.
Place in a shallow dish, cover with cling film, and microwave on high for 4-6 mins, turning the fish once during cooking.
Leave to stand for 5 mins before serving.
